Best bet looks to be to take a bus from the airport to Zell.
Busses depart at 10:20, 12:20, 2:20 etc, and take about 40 minutes (nice ride) to get to Zell. Then it should be possible to take a train and catch up with the Koblenz river boat for the rest of the ride. Or -- just take the train into Koblenz.
Most likely bus connection: 14:20 Flughafen Hahn Busbahnhof
14:58 Zell Lindenplatz
15:06 Bullay Umweltbahnhof
Another bus takes you from Zell to Bullay. A train from Bullay to Koblenz leaves shortly after 4, and then again on this schedule.
